Hayate
The culmination of Sakai cutlery inherited by Mr. Itsuo Doi, the fourth generation of the Doi family. The steel is treated with care and the blade’s sharpness is maximized through low-temperature bonding and forging, while cold forging breaks down the molecules to increase durability through malleability. The blue steel allows for a sharp, easy-to-sharpen edge that stays sharp, making it a popular choice. In addition to the top-grade model, we also offer an affordable option.
