The White Paper No. 1 multilayer steel kitchen knife crafted by traditional craftsman Kenji Togashi.
A master of white steel, Togashi carefully forged the white Ichigo steel, which is sensitive to temperature management, into a multi-layered steel blade.
It is a masterpiece that has been subjected to appropriate heat treatment and tempering to suit the current cooking environment.
The deep-seated technology of knife manufacturing and the beauty of multilayered steel are incorporated into the product. Additionally, the Hon-Kasumi Plus sharpening structure helps the blade retain its shape and maintain an easy sharpening “TOGIMICHI”, which is incorporated into the knife’s structure. This knife is recommended for intermediate to advanced users. The “TOGIMICHI” is a pathway for sharpening that is built into the knife structure. By following this guideline, it helps to preserve the knife’s original shape while sharpening.
