Quality Knives, Timeless Love: A 19-Year Journey

The 300mm Yanagiha INOX-Honyaki Wa-Bocho has returned for maintenance, and it left such a strong impression that I just had to share it with you.

The knife at the top of the photo is the well-used one we recently received for maintenance, while the one at the bottom is a brand-new knife of the same length. After looking into it, I found that this knife was originally shipped on May 19, 1998.
Now, in June 2017, it’s been an incredible 19 years of use! After being used for so long, I can imagine it has become an extension of the user’s hand. It’s been treasured as a go-to knife for prep work, and I’m truly grateful to see it so well cared for.
I’ll give it a light sharpening and send it back with care tomorrow.
