A Perfect Pair: The Story of Married Knives

At the end of the year, I heard from Doi-san that the KamaUsuba was finished, so I had been eagerly waiting to sharpen it.

Today, with excitement, I checked the final result—and every single one had the Honkasumi+ specification, with an outstanding grind structure!

The chef who ordered them came all the way from Kyoto to pick them up and ended up purchasing two knives. His wife, though she didn’t visit the shop, is also a former chef. Apparently, she had been wanting a large KamaUsuba, so he chose one for her along with his own.

The Itii octagonal handle is for the husband’s knife.
The Ho octagonal handle is for the wife’s knife.

For the wife’s knife, I also received a request for Honbazuke.

This was the perfect chance to perform Honbazuke on one of Doi Itsuo’s knives, which now have a slightly different feel than before. Since the knife will be mainly used for fine chopping tasks like julienne cutting, Honbazuke will bring out its best potential.

I’m really looking forward to seeing how it turns out!
