A touch of essence!

It’s been a while since I’ve shared my daily sharpening experiences on the blog. I’m always experimenting, trying to come up with something new.

To begin with, if I wanted to ensure they don’t become old, I could simply avoid trying new things (^^;). But somehow, it’s as if it’s in Suisin’s spirit… I always feel like I have to keep pushing forward, constantly running…

Let’s charge ahead! A touch of essence! One aspect is the final edge finishing! I tried it with a Deba knife, and leaving the sharpening marks from the medium grit stone seems to reduce food sticking and resistance… Placing the finishing stone on the knife like this might require some delicate handling, but if you have the time, please give it a try!

Either way! Whether you’ve gone for a mirror-like finish or a Kasumi-style one, remember to moisten your knife with a damp cloth or something similar before you start cutting! It makes a world of difference in how smoothly your knife glides (reducing friction resistance) when it’s not bone dry.

Here’s another little secret! In fact, I sharpened the Deba knife for this very secret reason (^^)b It’s going to be a new proposal, following in the footsteps of the Itohiki edge, but… I’ll keep it to myself until I’ve experienced it firsthand. I might have introduced it before, but I’ve also discovered an ultra-grade medium grit stone that I highly recommend! It’s super fast to sharpen with! We have it available exclusively through online sales.
