Deba knives crafted by Doi-san
The Deba knife I requested from Doi-san at the end of last year has finally been completed.
While Doi-san is mostly known for crafting Yanagiba knives, he also produces outstanding Deba knives. His trademark skills, low-temperature forging and cold forging, are applied here as well. Traditional methods have been carried forward, and the blade edge is beautifully shaped through hammer forging.
When you examine the hammer marks, they give the impression of a well-tightened and refined finish. This knife will be rested for a while before heading for a Honkasumi+ sharpening. Hoping to avoid aike , I had three knives made as a precaution.
The actual order was for just one knife. When it’s a one-to-one match, the odds of “losing” (aike occurring) are higher. But when there’s room for extra pieces, it’s funny how they all seem to “win” (turn out as high-quality products).
This time, since they’re Deba knives crafted by Doi-san, even if all three turn out perfect and two end up as stock, their future value is immeasurable!
This is my first exciting knife of the year, and I can’t wait to see how it performs!
