It’s Finally Here!

The 195mm Deba knife in Aogami #2 steel by Doi-san, which I mentioned in a recent post, has finally been completed!

As I mentioned earlier, we had three knives made to account for the possibility of Aike, but all of them turned out flawless with no Aike—each one a fine piece!


The back side of the blade is beautifully uniform.
For the one requested knife, I’ll be doing a Honbaduke focused on creating a flat-grind-like performance specific to a Deba knife.
Flat-grind for a Deba? Sounds odd, right? But rest assured, I’ve already confirmed this approach with the customer!
This knife is going to cut so well! It’ll be easy to sharpen too! Honestly, I can’t wait to try it myself.
Just imagine that sashimi knife sharpness brought to the edge of a Deba… Ah, I can’t wait to start sharpening it!
