King sharpening stone G-1

After various experiments with different sharpening stones, I ended up accumulating quite a collection of them! Eventually, I could hear the accounting department saying, ‘You’ve got enough already,’ so I decided to go back to basics and try using a King sharpening stone.

I used the S-1 and G-1 stones, but the G-1 proved to be quite effective. Even when dealing with silver steel, I achieved that ‘bite’ sensation using this stone alone. Its grit seemed more like #6000 despite being labeled as #8000.

Sharpening is a rabbit hole – once you get deep into it, you tend to lean towards finer grits. But, there seems to be a point where practical sharpening particles (grit) come into play. There’s a certain edge that most people can appreciate.

I went to the ‘Toretore Market’ in Shirahama and observed how they sliced a large tuna with a single stroke! I realized that dawdling in a long line would be unacceptable. The sharpening had to be tailored to this kind of work, I thought.

While wandering around the market, I saw someone using a Suisin INOX Western Deba knife. I was surprised to see it being used in such a place – it made me happy!
