The Shiro-Hayate Loved by Professional Chefs

The beloved Shiro-Hayate, which was cherished by professional chefs, has been discontinued, and the remaining stock sold out quickly… However, I secretly kept one last 300mm Yanagiba Shiro-Hayate hidden away in my treasure box.

Today, this final Yanagiba will be shipped. There’s a bit of sadness in letting it go, but also happiness in knowing it has found the right person.

A knife is a tool, and it only gains meaning when it’s used! This knife will now go to a chef who will cherish and make the most of it.

Since I was asked to perform the Honbazuke sharpening, I made sure to grind it as carefully as possible to preserve the knife.

I’m eagerly awaiting the day when Doi Ituo, who is the only one to have inherited the technique from Doi Keijirou, will bring back the Shiro-Hayate.
