Today’s sharpening

Today, I worked on the final edge for a 165mm Deba with a Kishubukushin mirror-polished front.
The request was for final edging up to a middle stone, but I decided to take it a step further and use Suita as well.

By the way, is Suita considered a middle stone among natural stones?
Aoto is definitely classified as a middle stone—no doubt about that!
It’s a subtle distinction, but when I think of finishing stones, my mind leans toward Awasedo.

This time, I leveled out the unevenness with a #500 diamond stone and then jumped straight to Suita.
For a Deba, the edge is on the thinner side, but given it’s a 165mm Deba, I prioritized a nimble feel for precise handling.

Crafted by Togashi, a master of Deba knives, its durability is outstanding! That said, I’ve incorporated an imperceptible convex edge for extra resilience.

After attaching the handle, I’ll complete the final sharpening and Uraoshi, and it will be ready to go.

I often get asked about the rainbow-like sheen on the knife in the photos—it’s due to a protective vinyl coating applied to prevent rust.
Before shipping, I remove it completely with an oil wipe to ensure a flawless finish!
