running sharpness
Mr. Doi came to the office to discuss the prices of the knives and to complete various other errands. We talked about Honyaki, white1 Steel, price increases, and health. In that conversation, Mr. Doi described the sharpness of the knives he makes as “running sharpness.”
We often hear expressions such as “sharp”, “cut well”, “bite”, and “hang”, but “running” It was the first time I heard the expression, but I thought it was a very good expression. It’s exactly the perfect expression for Mr. Doi’s knives!
