The layer of the stone seemed to have changed a little, so I had to search for it while sharpening the blade, but I was able to sharpen it beautifully.
Although you can’t see it in the photo, there are some areas left unpolished.
As always, I try not to sharpen it so as not to reduce it unnecessarily.
The cutting performance? Well, it’s just… AMAZING (Lol). I was careful, thinking it would cut well, and next thing I knew, I was nicking my fingers all over. Even a slight touch with a cloth while wiping the knife and it just sliced through!
While similar cutting characteristics can be achieved with Aogami #2, Silver #3, and INOX steels, there’s something special about White #1. It’s like the king of white steels; it cuts deep and fast without much technique required!
Pricing can vary based on the specific knife configuration, but at SUISIN, the basic price for Aogami #2 Mizu Honyaki is the same as for White #1 Mizu Honyaki.
